OUTLINE
和歌山県の小さな港町、すさみ町にて行われた町の未来を考えるカンファレンスの前夜祭にて、土地の未利用魚を使った飲食ブースを担当させていただきました。水産資源が豊富なまちの混獲魚であるシイラやオキザワラといった魚は、価値がつかず流通されない魚として通称 "未利用魚"という複雑なカテゴリ呼称で呼ばれています。食べてみると美味しくて、価値がないということはまず考えられません。この業界に携わる僕たちの目線から見ての「TASTY&RARITY」。未利用魚という社会的な文脈ではなく「おいしくて、レアな魚。」それがこのお魚たちの本当の価値を示す言葉です。沢山の方に知って頂き、楽しみながら生き物を大切にする姿勢を伝えていく取り組みです。
OUTLINE
On the eve of a conference on the future of the town of Susami, a small port town in Wakayama Prefecture, we were in charge of a food and beverage booth featuring unutilized local fish. In a town rich in fisheries resources, fish such as dolphinfish and okizawara, which are bycatch fish, are commonly referred to as "unused fish," a complex category of fish that are not distributed because they have no value. They are delicious to eat, and it is hard to imagine that they are worthless. TASTY & RARITY" from the perspective of those of us in the industry. Not in the social context of underutilized fish, but in the context of "tasty and rare." That is the word that shows the true value of these fish. This is an initiative to let as many people as possible know about them and convey our attitude of taking care of living creatures while having fun.





STORY
プロジェクトメンバーの出身地に近い和歌山の美しい自然に惚れてその土地に通う中で、すさみ町の方々よりお話しを頂いたことがこのPJの発端。地元の廃校で開催されたイベント当日はシイラのフィッシュバーガー、京都の人気店FRITES STAANとのコラボレーションで、オキザワラのフィッシュ&フリッツの2品を提供させていただきました。当日までの数日間は地域の津波対策防災拠点施設の厨房をお借りして準備。シイラの水揚げ現場の同行もさせていただいています。

STORY
This PJ started when we were asked by the town of Susami to open a food booth in Wakayama, a place near our members' hometown, as we had fallen in love with the beautiful nature there and had been commuting there. On the day of the event, we served two items: a shira fish burger and fish and fritz of okizawara in collaboration with FRITES STAAN, a popular restaurant in Kyoto. In the days leading up to the day of the event, we borrowed the kitchen of a local tsunami preparedness base facility to prepare the food. We were also able to accompany them on the site where they landed the dolphinfish.
