OUTLINE
OUTLINE
This case study details our involvement in the refurbishment of IRODORI, the main dining venue at the members-only resort hotel ‘Tokyu Harvest Club Nanki Tanabe’. We were responsible for project management across the entire restaurant refurbishment project, as well as planning the new concept and branding. Throughout the approximately nine-month project, we provided comprehensive support, ranging from product planning meetings and tasting sessions with local staff, to the selection of kitchen equipment, tableware styling, the production of promotional materials, and social media consultancy. The venue has been transformed into a new resort dining experience brimming with the unique local character of the Kinan region and modern charm.

STORY

STORY
in the early stages of the project, the core idea behind the refurbishment plan was to reimagine the ‘ristorante’ concept—previously offered as a set-menu format—as a more approachable ‘trattoria’, and to integrate this with a Japanese buffet. To ensure the concept fits seamlessly into the spacious setting, we skilfully combined the enjoyable Italian dining experience of the trattoria with Japanese cuisine—a menu that caters to the needs of guests of all ages. This has evolved the venue into a concept offering a diverse range of experiences, even amongst Japan’s hot spring resorts. Whilst retaining the high-quality cuisine originally served in the ‘Ristorante’, the restaurant now features main courses and antipasti with the warm, welcoming atmosphere characteristic of a ‘Trattoria’, alongside freshly baked focaccia and a handmade gelato bar. From classics such as tempura and sashimi to breakfast rice balls made with Tamba rice—a region renowned for its rice—the restaurant has evolved into a venue where guests can enjoy different experiences depending on the time of day.

STORY

STORY

Originally used as a ‘ristorante’, this set-menu restaurant has been reimagined to offer not only Italian cuisine but also Japanese set menus, creating a dining experience that allows guests of all nationalities to savour the seasonal produce of the Tamba region. Beyond the glass-walled space, which juts out like a stage, the scenery of Arima and the lush forest stretch out before you. The result is a distinctly Japanese gourmet concept that seamlessly blends the best of traditional hot spring culture with the unique appeal of a hotel restaurant.

STORY

STORY
The eight-seat counter, which has served as a kappo-style Japanese dining counter since the restaurant first opened, has now been transformed into a venue specialising in sushi. This move to a new counter-style concept not only enhances the dining experience for our guests but also provides a platform for young chefs to flourish, thereby helping to sustain the restaurant’s future. It is an initiative that also focuses on the functions that underpin the restaurant behind the scenes, such as customer satisfaction, profitability and the training environment.
